Here I go again with the citrus recipes. I cannot help my love for citrus fruit!
Limes are at the top of my “citrus that I love” list, as I think they bring something unique to the table. Whether it is in salsa, in a cake, or as a flavor of tortilla chip, lime beats all other citrus fruits, hands down. Of course, lemons, oranges, and grapefruits have their delicious properties, too, so I won’t dismiss them completely. ????
This baked lime custard is delicious in a pie shell or served in small ramekins with a cute little sugar cookie floating on top.

- 3 Tablespoons cornstarch
- 2 1/4 cups milk
- 2 teaspoons freshly grated lime zest
- 1 egg
- 2 egg yolks
- 1/2 cup sugar
- 2 teaspoons all-purpose flour
- 1/2 cup lime juice
Instructions
- Whisk the cornstarch and milk together in a medium sized saucepan over medium-low heat. Add the lime zest.
- Cook over medium-low heat for 10 minutes , stirring frequently. Allow to simmer, but do not boil, until it is thickened enough that it coats the back side of a wooden spoon. Set aside to cool.
- Preheat the oven to 350 degrees.
- Beat the egg and yolks in a bowl. Strain the cornstarch mixture of the zest and add to the eggs with the sugar, flour and lime juice. Whisk until smooth and creamy.
- Add to ramekins, pie crust or a dish and bake for 25 minutes or until set. Allow to cool and chill for a few hours before serving. Garnish with more zest if you wish.
