Pizza Tater Tot Casserole

The new Gooseberry Patch cookbook Almost Homemade completely sums up my approach to cooking. Sprinkle in a bit of scratch cooking with a side of almost homemade and you have life in my kitchen. I don’t think I am alone here. These days busy parents don’t have 2 hours to make dinner every night and we need it to be easy. Healthy, economical, tasty and easy.

Pizza night is always a fun night at our house. Often, we’ll make individual flatbread pizzas so all of us can top them with our favorite toppings. When we’re sharing pizza, we like to make Sausage and Caramelized Onions Smoked Gouda Pizza. But this easy casserole recipe is a surefire winner in our house. It is packed with pepperoni and lots of cheese, plus crispy tater tots instead of pizza crust. You can’t go wrong!

Another Gooseberry Patch recipe that we enjoy is pepperoni pizza rolls, but those are more of a snack or appetizer than a main dish dinner. Great game day food for the guys, too.

Pizza Tater Tot Casserole

All your favorite pizza toppings baked into a casserole, topped with crispy tater tots. A family favorite weeknight casserole recipe!

Ingredients

  • 1 lb ground beef
  • 1/4 onion, chopped
  • 10 3/4 oz can cream of mushroom condensed soup
  • 8 oz pizza sauce
  • 12 to 15 slices pepperoni
  • 1/2 C green pepper, chopped
  • 1 C shredded mozzarella cheese
  • 16 oz bag of tater tots

Instructions

  1. In a large skillet brown the hamburger, drain, add the onions and cook until soft.
  2. Add the soup and allow to boil on medium heat, stirring occasionally, 5 minutes.
  3. Add to an 8×8 baking dish and smooth to cover bottom.
  4. Pour over the pizza sauce evenly.
  5. Add the pepperoni and peppers.
  6. Cover with cheese.
  7. Top with tater tots.
  8. Wrap tightly with foil.
  9. Bake at 375 degrees for 30 minutes.
  10. Uncover and bake an additional 15-20 minutes or until heated through.

    My favorite "almost homemade meal" is pizza: IFresh Thyme Market sells some great pre-packaged crusts in different flavors that I use. I stop by a local Italian/pizza place and pick up meatballs and sauce (runs about $4.00) and with some mozzeralla added to the crust/sauce/meatballs, a quick bake in the oven and I have good pizza that didn't cost an arm and a leg.

    My favorite "almost homemade meal" is a quick curry made with boneless chicken breast and Trader Joe's Curry Simmer Sauce. If I'm really pressed for time, I just throw those two ingredients together and serve it over rice and it's absolutely delicious!

    My favorite almost homemade dinner is a lasagna I make with no boil noodles! If I'm really in a hurry I use jarred spaghetti sauce!

    Sometimes if I don't have 3 hours to make my sauce, I'll use a good jarred sauce - but everything else is homemade - my meatballs, etc.
