Laughing Cow Queso Salsa Dip

I love, LOVE cheese.  Do I eat a lot of it, no.  Should I , probably not. But, I do add a wedge of Laughing Cow Cheese or 2 here and there because the average wedge has less calories and fat than your usual cheese snack.  It’s great spread on bread for a sandwich, is very portable and my kids love it.
One of my favorite ways to use Laughing Cow Cheese is to add a wedge or 2 to the skillet when making scrambled eggs or mashed potatoes.  It adds a bit more creamy flavor and I skip adding milk and other fats and go straight to the cheese!

Recently Laughing Cow sent me a sample of their new light Queso Fresco cheese to try for myself.  I guess I talk about their cheese a lot ????  I decided to try out one of their recipes on a few friends and they loved it. It took me all of 2 minutes to prepare and it was gone in 10 minutes.  It’s that good.  I served this dip with a basket full of Guiltless Gourmet blue corn tortilla chips.  Did I mention that each wedge of this LC cheese is only 35 calories?

Laughing Cow Simple Cheesy Salsa Dip
4 wedges of Laughing Cow Light Queso Fresco & Chipotle Cheese
1 C of your favorite salsa

Unwrap The Laughing Cow Cheese wedges and place them in a small bowl.  Microwave for about 30 seconds then stir.  Cheese should be warm and melted.  Add salsa to the cheese and stir.  Serve with your choice of dip-ables ????
*I doubled this recipe and used the whole box of cheese and 2 cups of salsa .

The Laughing Cow® provided me with product for this review but seriously….I love cheese I love chips…does it matter where I got it? I Heart Cheese Dip!
