Easter leftovers may soon be stalking your fridge, but there’s no need to worry. Here are some quick and easy weeknight dinner recipes to help you use up heaps of ham, an abundance of asparagus, and endless hard boiled eggs!
I really enjoy making a nice Easter meal for my family, especially glazed ham. But with a smaller sized family, there is always ham left over that needs to be used up. Hard boiled eggs are another common leftover, but so much now that my boys are older and we don’t do Easter egg hunts anymore. The asparagus that I buy usually comes in a big bunch, so very often, that has to be used up within a few days, too.
Fortunately, Easter leftovers like those are easy to convert into appetizers, sides, and weeknight dinners!
