Cheddar beef snack bread is made with a light dough, filled with sliced beef and shredded cheddar cheese. It’s the perfect brunch appetizer, game day food, or after school snack!
Every year it seems that I make the same things for Easter meals. Yeast rolls, fresh fruit salad, roast ham, and a veggie like green beans.
Last year, I decided to overhaul my menu. This year, I am adding one more item into the lineup: Cheddar Beef Snack Bread.
This quick snack bread is perfect for brunch served with an egg dish, fruit and a nice cup of coffee. My kids like to eat this as an after school snack. The recipe makes enough for one 15×10 jelly roll pan. Cut into small squares, it serves my family, with leftovers to spare. The fragrance of the caraway seeds really sets this recipe apart from other snack bread recipes that I have made in the past.

Ingredients
- 3 C bread flour, unbleached (I used King Arthur)
- 2 1/4 tsp active dry yeast
- 2 TB sugar
- 1 Tb minced onion flakes
- 1 tsp salt
- 1 tsp caraway seed
- 1 cup milk (any kind, but higher fat like whole milk is best)
- 1/4 C water
- 3 TB shortening
- 1 egg separated
- 4 oz sliced cooked beef or diced roast beef
- 1 1/2 cups shredded cheddar cheese (I used Cabot Creamery)
Instructions
- Heat oven to 375°F
- In a large mixer bowl, combine 2 cups flour, yeast, sugar, onion, salt and caraway seed; mix well. In saucepan, heat milk, water and shortening to 120-130°F (shortening does not need to melt); add wet ingredients to flour mixture. Add egg yolk. Blend at low speed until moistened, then beat 3 minutes at medium speed.
- By hand, gradually stir in remaining flour to make a stiff batter. Spread evenly in greased 15×10-inch jelly roll pan. Brush with slightly beaten egg white. Sprinkle with beef and shredded cheese.
- Bake for 25 to 30 minutes until golden brown. Slice and serve warm.
