Caramel chocolate covered pretzel bars are a seriously addictive, sweet and salty dessert. They have a soft cookie base, creamy caramel, and crunchy pretzels covered with chocolate. Super easy to make, too!
If you have ever spent time waiting in line at Starbucks, you know how it is. You’re standing there for what seems like forever, and all there is to do while waiting is either listen to the person in front of you talking loudly on a cell phone or stare at the pastry case. I choose to do both. ????
It’s my son’s fault, really. He is absolutely in love with the rocky road cake pops. I mean, how can I say no to him? Not only does he have the most beautiful brown eyes you have ever seen, but he also can argue his case well.
I say, “You do not need a sweet treat, we are just here for coffee” He says, ” Mom, seriously, it is like ONE bite of cake and it’s SO cheap“.
He is right. He did have a point, and he knew it!
The worst part is, I can make rocky road cake pops. I can and have made him his own little treasure trove of cake pops, but Noooooo. He wants the kind that come frozen. Go figure.
But this is how I came to discover the happiness that is the Starbucks sweet and salty squares.
Or as I prefer to call them, caramel chocolate covered pretzel bars.
Sweet, salty, soft and crunchy, all in one bite. I’m telling you, they are Heaven in the mouth! My version of these dessert bars are more crunchy, not quite as soft as the Starbucks sweet and salty squares. But in my opinion, they are awesome! And because I made them, that is what counts. ????
Besides, my caramel chocolate covered pretzel bars are not as messy as the ones at Starbucks. So it’s possible that they are better than Starbucks! Who knew?
My point is, these dessert bars are like Crack. OK, that’s not funny… drugs are serious business. But seriously, this salty, sweet dessert is addictive.
It is nearly impossible for me to eat just one of these caramel chocolate covered pretzel bars.
Perhaps you have more willpower than I do, though. Go ahead…try it. ????

Ingredients
- 1 cup pretzel sticks
- 1 1/2 cups chocolate chips

For the Crust
- 1/3 cup brown sugar
- 1/4 cup unsalted butter, softened
- 1 tsp vanilla
- 3/4 cup all purpose flour

Caramel layer
- 1 cup salted butter
- 1 cup firmly packed brown sugar
Instructions
- Preheat oven to 375 degrees F.
Make the Crust
- Mix the first 3 ingredients with a pastry blender, then add the flour, ‘cut it in’ to combine. Press into an 8 inch square glass pan that has been buttered and bake for 12-15 minutes, or until lightly browned.
Make the Caramel
- In a saucepan over medium heat, melt the butter then add brown sugar. Stir to combine, then bring to a simmer and cook on medium heat until a light caramel forms, about 5 minutes.
Assembly
- When your crust is complete, sprinkle a layer of pretzel sticks thinly over the hot crust. Pour the caramel sauce over the pretzels and crust and then sprinkle on a layer of chocolate chips. I used dark (60% Cacao) Ghiradelli chips to offset the sweetness of the caramel. Use a flat spatula to smooth over the chips as they melt.
- Allow to set until firm, cut and serve!
