Roasted Red Pepper hummus, your favorite pizza toppings and a flat bread or ‘crust’ and that is all you need to have a quick snack in your busy day. I like to call this snack the unofficial meal because that is exactly what it is. A little bit of this and that to tie you over until your next meal.
It tends to be very casual and relaxed — lacking the formalities and structure of an official meal. It’s perfectly fine to stand up and graze around the counter-top, help yourself to the fridge, eat with your hands, turn the music everyone to speak at once.

After a long day of being separated, this is the chance to reconnect at home with your family and friends and share the highlights of the day. Conversation tends to be fresh, real and honest. It’s that moment to finally let your hair down, open up and be yourself.

Every day when my sons get home we have an agreement of sorts. I get 30 minutes of their time and after that, they are free to do as they please all night. Homework, swim practice, Minecraft server maintenance- whatever they want. I just want those precious 30 minutes after they get off of the bus.
They are hungry, they are thirsty and above all things, they need me. So I make a special point to be here when they get off of the bus. I love this little bit of time.
One thing I need to have on the ready is a mini-meal while I get dinner ready. A little bit of this and that to get them over the after-school hump. You would think they had fasted all day based off of their HANGRY level.
My secret to full belly happiness? Feed them some fun with some healthy. Peanut/sunflower seed/dark chocolate/dried cranberry trail mix, white cheddar popcorn (what? I live in INDIANA!!) and dips. DIPS!!! Do you know you can get kids to eat almost anything when it is in the form of a dip?? Well- you can.

Hummus is super healthy and man do my kids eat the heck out of hummus. My oldest wants ALL the protein and my youngest wants to dip ALL the things.
Boom- pizza topped hummus.
I almost always have the makings of pizza in the house. Pepperoni, cheese, a little bit of this and that- and hummus as your base is all you need to create one heck of an after-school snack. An unofficial meal if you will.
