Hot pasta tossed with hummus thinned with a little chicken stock and soy sauce, combined with a little chicken, veggies and feta cheese- and BAM! Dinner is ready. A healthy dinner to boot.

Yes, there is a day dedicated to this special dip/condiment/topping! So many uses, so little time.
Now you may be asking yourself: what is hummus?
Real hummus is made from chick peas (garbanzo beans) ground into a smooth paste and combined with a touch of sea salt, olive oil, and garlic tahini paste (which is ground sesame seeds).
Sabra grows their own chick peas in the United States that are shipped directly to their ‘hummus kitchen’ in Virginia and then shipped straight to your favorite grocery store. There are so many flavor varieties of hummus, it is hard to choose a favorite. Definitely in my top 3 would be classic, roasted garlic, and lemon twist.
The Hummus tossed noodles recipe I am sharing today is also fantastic with both of those varieties- just drop the soy sauce.
I hope you are getting the idea that hummus, as awesome as it is on it’s own, is also a very versatile ingredient.

Tender pasta, tossed with hummus, chicken, and vegetables. A great snack or dinner.

Ingredients
- 1/2 C classic Sabra hummus (roasted garlic is great too!)
- 1/2 C chicken broth or stock
- 4 TB rice wine vinegar
- 4 TB low-sodium soy sauce
- 1 lb cooked spaghetti, cooked to al dente – reserve 1/3 C of the salted pasta water before draining
- 2 chicken breasts- cooked and sliced (roughly 1/2 lb- feel free to use more)
- 1 small red pepper- thinly sliced
- 1/2 C fresh baby spinach- chopped
- 4 green onions, white and green chopped
- 4 oz crumbled feta cheese
Instructions
- Cook pasta to an al dente state in salted water.
- Reserve 1/3 C of pasta water.
- Add the hummus, broth/stock, and soy sauce to a large serving bowl. Stir to combine, then toss with hot pasta to coat.
- Add in the chicken, peppers, onions,and spinach.Toss to combine.
- If the pasta needs to be thinned out a bit, toss with a bit of the pasta water you reserved.
- Top with feta cheese and serve.
