Fresh Raspberry Salsa- a zesty way to enjoy a summer favorite!
Have you ever had fresh raspberry salsa? Have you ever had a fresh fruit salsa? Recently, I made fresh raspberry salsa for a cooking demonstration at 2 new Fresh Thyme Farmers Market locations in Fishers/Carmel, Indiana. I had such a HUGE reaction from those in attendance that I knew I had to share this recipe.
I am a big fan of fresh salsa. I have several fresh salsa recipes in my head that I make when I can. Fresh fruit salsa though- I don’t make that quite as often. This year though I have made a grilled peach salsa, mango black bean, strawberry salsa and this gem- fresh raspberry salsa.
I wanted to capitalize on the seasonal fruit being on such a great sale at Fresh Thyme. They were selling Driscoll’s raspberries for 77 cents a package. So of course I bought 21 packages. A few to keep and the rest went for the salsa.
I made my standard fresh strawberry salsa recipe but used raspberries instead. I almost liked it better. The recipe is so simple- all I did was dump each prepped item in one of my favorite cooking demonstration round food storage containers (you really need one of these if you cook large amounts of food at one time) from Zesco.com.
I mention this because 1. that is just how simple this fresh raspberry salsa recipe is and 2. because more than one person offered to buy the remaining salsa I had in my container and several people asked me where I got it.

Really, you can ask my mom. People were over the moon about it. I served it in a little cup with a tortilla chip and a thin slice of grilled chicken. Everything I served those 2 days came from Fresh Thyme and all of the main ingredients were on sale. You can’t beat that!
Again, I want to thank Fresh Thyme Farmers Market for inviting me back again and again to their new stores. All told I handed out over 1300 samples in 2 days and talked to SO many people about food, options, recipes, substitutions, and talked countless people who thought they wouldn’t like this into eating it- and loving it! I am honored to be a part of their shopping experiences!

Ingredients
- 5 C fresh raspberries, washed and dried
- 3/4 C diced sweet onion
- 1 lg jalapeno, seeded and diced
- 3 cloves garlic, minced
- 1/2 C cilantro, chopped
- 1 1/2 tsp white sugar
- 1/2 C lime juice
- pinch salt
Instructions
- Combine all ingredients in a large, non-reactive bowl.
- Allow to sit in refrigerator for 1 hour.
- No need to mash, the acid in the lime juice breaks down the berries.
- Serve over chicken, fish, pork or chips.
