Easy Skillet Lasagna

Easy skillet lasagna is quick and easy comfort food for dinner! This quick one-skillet dinner recipe encompasses all of the things you like about lasagna, but made in less time with way fewer ingredients.  I am sure your whole family will love the classic flavors in this rich and creamy Italian dish.

You may have experienced this before…You slave away making dinner only to have your kids make a face when they see the plated meal sitting before them.  I have been there…if you haven’t then you are crazy.  If you have kids and you have NEVER made something that they DON’T like then I want to meet your kids.  Really.

Last week, I made some rockin’ dinners.  I mean, meals that took me a long time to get on the table.  I had little to do every night besides ‘family stuff’ and a crappy week at work to boot, so kitchen therapy was what I needed.  So, I made beef Wellington, chicken Kiev and shrimp rollitini.  The latter was the one that got the biggest reaction from my kids.  They liked it…it was just not appetizing to look at.  Not every meal is pretty. ????

So when I went to the Taste of Home Cooking Show Saturday and met Chef Dana Elliott I knew right off of the bat that she was going to be making my dinner.  What I mean is that she shoots straight from the hip, mixes it up a bit and is like a walking food dictionary.  Her show was fabulous and it wouldn’t have been the same without her!

She made something that I have made many times, skillet lasagna, but I have never used one of the ingredients before.  I have avoided buying it since it came out because I am not one to buy pre-made food items or things that are overly processed. I know, I know…that sounds like food snobbery, but it’s true.  Nothing wrong with the product, this is just a personal choice.  I was willing to relax my OCD here and make the easy skillet lasagna recipe, and I am SO glad I did!  Talk about a winner…We ate every scrap of it!

Easy Skillet Lasagna

All of the flavors of your favorite lasagna, made quicker and with less ingredients.

Ingredients

  • 1.5 lb lean ground meat of your choice
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper*
  • 3 cups (24 oz) spaghetti sauce
  • 2 cups water
  • 12 lasagna noodles, broken
  • 1 tub of Philadelphia Tomato and Basil Cooking Cream

Instructions

  1. Brown the meat and the peppers or veggies of choice in a deep, large , non-stick skillet. Stir in sauce and water.  Bring to a boil.  Stir in the noodles, cover.  Simmer on medium-low heat for 15 minutes or until the noodles are tender and the mixture is thickened.
  2. Add the cooking cream, swirl with a spoon, and remove from heat.  Let stand for about 3 minutes and serve.

Important Notes

If you don’t like bell peppers, feel free to use any vegetables your family enjoys.

I served this with fresh steamed broccolini, fresh Italian bread from the bakery nearby, and a tossed mixed green salad with a lemon vinaigrette dressing.
