Mexican Black Bean Salad

Mexican black bean salad is a quick and easy side dish, perfect for summer gatherings. It’s fresh, flavorful, and packed with healthy veggies!

Mexican Black Bean Salad

For the most part I am a fairly decisive person.  I generally know what I want and make it happen to the best of my ability.  I have been with people who spend 15 minutes making up their minds about a dinner choice on a menu, so I have learned what not to do.  Now, this doesn’t mean that I go through life with a clear cut plan but I have learned to make choices and rarely look back.  What would the point of that be?

2 nights ago my husband and I are standing in the paint department of Home Depot with my youngest son.  We are trying to agree on a paint color for our spare room. We had already decided that we wanted to a soft deep orange.  I know what you are thinking…Orange.. but you would have to see it, because it’s so clean and fresh. Change is a good thing and the wall this is going on (yes, 1 wall) is currently covered in 70’s style paneling, so ANYTHING would be better than that. We spent 20 minutes looking at 27 different shades before we settled on a color. Did I mention that this is just going on 1 wall?

In this case, the problem wasn’t me.  It was that my husband is very indecisive when it comes to certain things. He is a perfectionist, what can I say? I appreciate his attention to detail. ????

So, to reward my son’s patience (and because we needed to go to the store anyway), we let the boys pick out little single serving ice cream containers. I offered this as a choice, since the portions are small and there were like 32 choices! Of course, like their father, they could not make a decision. Too chocolaty, too fruity, too vanilla.  Enough already!!! I grabbed 4 little ice cream cups and walked out.  With my decision making ability, it took me all of 4 seconds.  Of course they ate it and were happy with what I picked.

What does indecision have to do with an easy Mexican black bean salad recipe?

Monday we went to a cook out for the Fourth of July holiday. I asked the hostess what she wanted me to bring. Almost before I had gotten the words out of my mouth, she said “the black bean salad”.  Now, here is a person I can appreciate!  She knew what she wanted and wasn’t afraid to ask for it! Clearly a woman after my own heart. ????

This black bean salad recipe has been made by many, a variety of different ways. We eat this easy side salad a LOT, especially in the summer. It’s great with grilled chicken or fish.  Also great on its own, or with sliced avocado on top for added flavor. Don’t be afraid to change it up a little.  Go for it!

Mexican Black Bean Salad

Fresh garden vegetables and cooked black beans tossed in a spicy vinaigrette. Fresh, flavorful, and healthy.

Ingredients

  • 4 cans of black beans, rinsed and drained
  • 1 pint of  grape tomatoes, sliced in half
  • 1 bunch of cilantro, chopped
  • zest and juice of 1 lime
  • 1/2 red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 orange bell pepper, seeded and diced
  • 4 ears of cooked corn kernels or 1 bag of frozen sweet corn
  • 2 jalapeno peppers, seeded and diced
  • 2 tsp cumin
  • salt/pepper
  • drizzle of olive oil

Instructions

  1. Add all ingredients to a salad bowl and toss to coat the vegetables.
  2. Cover and refrigerate until ready to serve.

    i've never been a fan of blackbean sauce, so i've tended to avoid anything with black beans in completely, but i have to admit this does sound very tasty! :)

    Oh you reminded of my husband! he has a problem making any decision..he has to ask and check and compare..it is wonderful in certain things but causes high blood pressure in otheRS.. I love the black bean thingy :) will have to try it soon.. by the way..I'm Sawsan from chef in disguise

    This recipe looks wonderful... will have to try it one of these days.... As I was reading your blog, I couldn't help but chuckle... We have moved into our house 2 1/2 years ago and it needed to be painted.... I had figured out the colours right away, but it has taken til now for my husband to decide.... and now we can paint.
