Zucchini and yellow squash are two healthy summer squash varieties found growing in nearly every vegetable garden. They’re easy to start from seeds and in a good growing season they seem to multiply like rabbits, making them the perfect ingredient for Summer time meals. These healthy summer squash recipes are so delicious, you’ll crave them immediately and they’re so quick and easy to make, you can have one of them landing on your table in less than 20 minutes.
Truth: Not all of these are 100% healthy summer squash recipes.
However, they all contain vitamin-packed yellow squash and/or zucchini, which makes them a little bit healthy to begin with.
In some cases, like with the first recipe for easy zucchini dip, you can easily substitute a lower fat cream cheese for the one that’s called for in the recipe. In other cases, use a lower saturated fat oil, or perhaps oven bake something instead of pan frying it.
