One of my favorite things about finding new healthy ways to enjoy eating is exploring options and revamping old favorites. Take hummus for example. I love it. I could and most likely eat a little bit of it every day. But I get tired of my dippers being pretzels, pitas and carrots. I frequently make a dinner out of it and for sure lunch (often).
But what about tossing in some roasted veggies (any kind), roasted chicken and feta? Scoop it all up with a whole grain pita and this is a satisfying and healthy dinner. Even my kids gave it 2 enthusiastic thumbs up!
There is NO real recipe here. I used a family size container of Sabra hummus, 1 lb of oven roasted chicken (marinaded in 1 lemon, oregano and salt/pepper), diced cucumber, feta, pita, and assorted roasted veggies. Layer in serving bowls like the above photo, dust with paprika, drizzle with olive oil and dinner is done!
