OK. I admit that I have an obsession with strawberries. But it could be worse. I could have an obsession with baked beans or frozen peas..there are only so many recipes that you can create using those ingredients. ????
A couple of days ago, I shared my recipe for Parmesan-Basil Stuffed Chicken Breasts with Strawberries. My family loves that recipe, but I really hit a home run when I made this strawberry pulled pork entree Wednesday night. Slow cooked boneless pork ribs combined with strawberries is a match made in barbecue heaven. At least in my family’s world it is. ????
This recipe could not be any easier to make. I started the crock pot in the morning and came home to an almost prepared dinner. I just had a few steps and we were good to go. The strawberry flavor is subtle and not overwhelming.

You can serve it on buns or inside of warm tortillas. Or if you want to save some carbs, serve it over salad greens as a healthy strawberry pulled pork salad.
Strawberry pulled pork goes great with chips or potato salad and some coleslaw. The perfect dessert to serve will, of course, have strawberries in it. Strawberry cookie cups or strawberry pie are my favorites.

Ingredients
- 3.5 pounds boneless pork ribs or 3 lb pork tenderloin
- salt/fresh pepper
- 4 cups sliced fresh strawberries
- 1/2 cup ketchup
- 1/4 cup cider vinegar
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- a few shakes of hot sauce (depending on how hot you want it)
Instructions
- In a slow cooker, combine all ingredients except pork and stir to combine. Season the pork with salt and pepper and add it to the crock.
- Cook on low for 8 hours. Then remove the pork, put it on a plate, and cover with aluminum foil.
- Use an immersion blender to puree the sauce inside of the slow cooker to remove any chunks of strawberry. You don’t have to do it, but I really prefer it.
- Use two forks to shred the pork, then add the shredded pork back to the sauce in the slow cooker and heat through for another 15-20 minutes.
