This easy quick bread is full of healthy oats and fiber-filled flax meal. It’s a great breakfast on the go or to serve as a side dish with your favorite dinner.
I wasn’t planning on posting today, but after I posted pictures of this delicious and easy quick bread on my Facebook page, I got a few emails from people asking me for the recipe. So, instead of emailing it a bunch of times, I thought I would just go ahead and put this easy quick bread recipe up!
This hearty oats loaf is one of my most used bread recipes. I make it often because it makes a great dinner accompaniment, and it is great in the morning with a bit of real butter and fresh preserves or honey.
This easy quick bread is also super quick to throw together. I am knee deep in apple butter right now that I’ve been making for my family and friends and let me tell you, apple butter straight out of the pot is perfect on this hearty oats loaf. As a matter of fact, I gave a mini loaf of this to my neighbors along with some apple butter last weekend. Here’s an easy slow cooker apple butter recipe.
Use any type of small, round pan for this. I typically use an 8 or 9 inch round cake pan. I am sure it doesn’t matter what size you use, but I am just a creature of habit. ????

Ingredients
- 2 cups unbleached all purpose flour
- 1 cup whole wheat flour
- 2 Tablespoons flax meal
- 1/2 cup plus 2 Tablespoons rolled oats (old fashioned or quick-cooking, but not instant oats)
- 1/4 cup sugar
- 1 Tablespoon baking powder
- 3/4 teaspoon salt
- 1 large egg
- 1 1/2 cups low fat milk (I used 1%)
- 3 Tablespoons canola oil
Instructions
- Preheat oven to 350 degrees. Spray your pan with a non stick spray or butter it. I dust the bottom with a bit of additional oatmeal, but this is optional.
- In a large bowl, combine flours, flax meal, 1/2 cup oats, sugar, baking powder, and salt. In a separate small bowl, combine the egg, milk and oil. Stir into the dry ingredients just until moist. Spread the batter into the pan and sprinkle the top with 2 Tablespoons oats.
- Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
