Blueberry sweet corn salsa is a bite of fresh summer produce. It’s delicious as a dip with pita chips , added to a salad, or use as a relish over grilled meat.
This easy salsa recipe is the last one in my summer salsa series. I shared this recipe, as well as fresh peach salsa and watermelon-blueberry feta salad on last month’s IndyStyle. Because of how close we live to Michigan, I visit there often, and especially during the blueberry season. If you ask me, few things taste better than plump, juicy, fresh blueberries, picked fresh from the bush!
I love using fresh blueberries in sweet muffins and desserts, but also in savory recipes like this blueberry sweet corn salsa.
Besides this salsa, one of my favorite savory recipes with blueberries is grilled duck with sweet corn and blueberries.
Making this salsa is so easy that you can put it together in just a few minutes of time.
Ingredients needed to make blueberry sweet corn salsa:
4 tsp olive oil.
1 C fresh sweet corn kernels, blanched.
1 C fresh blueberries.
1/4 C chopped sweet red onion.
2 TB chopped fresh cilantro (I use Garden Gourmet cilantro paste).
1/2 medium jalapeno pepper, seeds and membrane removed, and finely minced.
salt and black pepper, to taste.
Juice of 1 lime.
zest of 1 lime.
After washing and prepping the ingredients, everything gets tossed together in a large mixing bowl. Like I mentioned earlier, this salsa recipe is super easy to make!

Ingredients

- 1 C fresh blueberries.
- 1/4 C chopped sweet red onion.
- 2 TB chopped fresh cilantro (I use Garden Gourmet cilantro paste).
- 1/2 medium jalapeno pepper, seeds and membrane removed, and finely minced.
- salt and black pepper, to taste.
- Juice of 1 lime.
- zest of 1 lime.
Instructions
- Place all ingredients into a large mixing bowl. Use tongs, a large spoon, or your clean hands to toss until combined.
- Place into a covered container and chill until ready to serve.
- If kept in an airtight container in the refrigerator, this salsa should last up to 5 days.
