Spaghetti Soup!

This month I am reviewing the new Gooseberry Patch cookbook: Good-For-You Everyday Meals Cookbook (Everyday Cookbook Collection)
This is right up my alley and I am sure it is for many of you as well. From Spaghetti Soup to Overnight Oatmeal- I have found many new favorites in this new cookbook.

Spaghetti Soup

We like to eat well and we need to be able to afford to do so. In the last several years of being a part of basilmomma.com it has become apparent to me that THIS is exactly what my readers want. My recipes may not be flashy or trendy- but they are healthy, taste incredible and are affordable. Enter in my love of the ladies of Gooseberry Patch. They know exactly what we are looking for and have turned that into a thriving business.

From March 3-13 2014 I am giving away a copy of Good For You Everyday Meals. Enter HERE

With recipes as simple as can be- you can provide your family, your friends OR yourself with a home cooked meal- and fast. That is what we are all looking for, right?

This recipe is for spaghetti soup. I knew my sauce loving husband would be over the moon about this recipe and he was. It takes the best of what you love about spaghetti and lightens it up a bit by using less pasta- yet you still get that carb need satisfied. Use lean ground meat for this and in this particular instance I substituted crushed tomatoes for diced. You know, for my picky child who will not eat chunky tomatoes ????

In a few easy steps this can be on your table. This serves 4-5 as a main dish and a simple salad would go great with this meal.

Get your ingredients ready- I used my favorite tomatoes: Red Gold!
