This quick pasta recipes reminds me of 2 things I love: summer and vacation. Specifically vacation near a coastline. I love having fresh fish and seafood right from the source that is simply prepared in a lemon sauce and tossed with a bit of pasta and veggies. Alas, I live in Indiana. I boosted the heartiness of this dish while still keeping it light by spiralizing 2 zucchini’s AKA zoodles. Tossing these in at the end of the dish still keeps them fresh tasting while integrating them into the pasta mix. Best part is you are eating less pasta and more veggies because of this little addition. It helps to pull off the perfect “pasta” fake out if you leave in a bit of the pasta.

This recipe is kept light and fresh by using few ingredients and nothing heavy. You can prepare the sauce while the pasta cooks and both will be done at the same time. If you do not have a spiralizer of some sort then you can julienne the zucchini or slice thinly on the horizontal.
Zucchini Linguine Popcorn Shrimp Scampi
1/2 pound of linguine pasta
2 small zucchini, cut into thin strips
3 cloves garlic, minced
1 large bunch basil, 1/2 finely chopped for the sauce, the other half for garnish
1 C dry white wine
5 TB unsalted butter
1 TB olive oil
2 lemons, zest of 1, juice of both
1 18 oz box of SeaPak Shrimp & Seafood Co. Popcorn Shrimp
1 tsp red pepper flakes for garnish (optional)
Grated Parmesan cheese (optional)
Boil the pasta to an al dente state as per package directions.
Drain and set aside.
While the pasta is cooking melt the butter in a large skillet.
Add in the olive oil and garlic and saute 1 minute on medium heat.
Add in the wine and continue to cook on medium heat 2-3 minutes or until slightly reduced.
Reduce heat to low and stir in the lemon zest, lemon juice, basil and a bit of kosher salt and fresh black pepper (to taste).
Add in the entire box of SeaPak Shrimp & Seafood Co.Popcorn Shrimp, stir to coat.
Remove from heat and layer in the zucchini and linguine.
Toss to coat.
Portion in bowls, top with red pepper flakes, basil, grated Parmesan cheese, and a bit more lemon zest (optional).
