Duck bacon? In guacamole?
ABSOLUTELY! It’s pretty amazing, if I do say so myself. In my opinion, the addition of bacon to this popular condiment/dip makes it a complete meal. I mean, it is made of avocados (healthy), tomatoes (healthy), onions (healthy), cilantro (love it), garlic (good for you too), lime juice (I have nothing) and- DUCK BACON! That’s all you need, right?
And because I am such a giver, I actually found a way to lighten this dip recipe up.
Bacon in small doses is not the worst thing you can eat. Heck- eat everything that tastes good in small doses. But I kicked it up a notch by using DUCK bacon from Maple Leaf Farms! Maple Leaf Farms (henceforth known as MLF) is not only in Indiana, but they are also the largest producer of duck in the Midwest. In the United States. In NORTH AMERICA!! How fantastic is that? Do you remember when I toured there last year and enrolled (and graduated thank you very much) from Duck University? What? It’s a real thing! I have the certificate to prove it:
AND- I took the class with THE Sara Moulton! So there.
Anyhow- back to the duck. If you have been following me for a while then you know I am a MLF fan. A big fan. not only because this is an Indiana Grown food that employs hundreds and is raised on Indiana farms- but also because it is a healthy protein I can feed my family. Yes- it IS possible to make duck on a weeknight.
I made a recipe for Seared Duck Breasts with Orange Bourbon Molasses Sauce and it was on the table in under 30 minutes.

Now on to the duck bacon guacamole!

I used duck bacon because I like it AND it has 57% less fat than traditional pork bacon. What you use is up to you!

Ingredients
- 4 large avocados, ripe
- 2 roma tomatoes, diced
- 1/3 C minced sweet onion (red or sweet)
- 1 lime, zested and juiced (1 TB at least)
- 2 packed TB of chopped cilantro (I used Gourmet Garden prepared cilantro)
- 2 cloves garlic, minced (I used Gourmet Garden garlic paste)
- kosher salt/black pepper to taste
- pinch of red pepper flakes OR 2 tsp of Best Boy & Co Redhead hot sauce
- 1 package (or 6-8 strips) Maple Leaf Farms Duck bacon , cooked,cooled,and cut into small pieces
Instructions
- Remove avocado from skin, place in bowl, and lightly mash.
- Add all ingredients and mash together to your liking.
- Serve immediately.
