I should do a whole series on the best recipes with bacon.  Bacon onion dip, maple bacon cookies, bacon honey lime sriracha wings, and now bacon roasted chickpeas?!
Of course!

This really is one of the best recipes with bacon that I’ve ever made. Truthfully and technically, it’s not made with bacon, though. But it is made with bacon grease. Yes, you read that correctly.

Bacon grease! The Holy Grail of fat.

You can use the cooked bacon in something else delicious. Maybe a bacon, lettuce and tomato sandwich (that has Mexican street corn on it!), or add it to a chicken bacon ranch casserole.

Chicken Bacon Ranch Casserole- One heck of a family-pleasing dish!

The recipe below makes enough to last me for a few days. Feel free to double it if you think you’ll need more ???? I bet you will!

Oh, and make sure to store them in an airtight container, especially if your house is very humid. Otherwise, they will lose their crunch. Soggy chickpeas do not make a good snack.

Ingredients

  • 15 oz can of chickpeas, rinsed , dried, and any loose skins removed
  • 2 tablespoons of bacon grease
  • pinch of salt (more or less, to taste)
  • pinch of pepper (more or less, to taste)
  • small pinch of dried rosemary, rub in your hands to break up

Instructions

  1. Mix all contents in a small bowl. Spread out onto a cookie sheet lined with parchment paper.
  2. Bake at 400 degrees for 30 minutes, or until chickpeas are crunchy and not soft. I also toss them half way through the baking time to make sure that they bake evenly.
  3. Taste and add more salt and pepper if desired.
