Slow Cooker Corned Beef Brisket with Cabbage is a classic and traditional St. Patrick’s Day dinner. Making it in a slow cooker takes care of the hard work, so you can have a little extra luck of the Irish this year.

You know I love a holiday that involves a themed food! St Patrick’s Day and corned beef seem to be at the top of everyone’s list right now so of course that is what I made on my Eating Around Indy segment on Fox59!

I love all of the Irish flavors and hearty food for St. Patrick’s Day, but I think corned beef is probably my favorite. It’s tasty on its own, and of course, the leftovers can be used to make a delicious reuben sandwich!

My recipe for slow cooker corned beef brisket and cabbage is very simple. I add one of my favorite local stouts to the pot, but Guinness is a delicious choice, too.

This turned out tender, juicy and is so easy my kids could make it! Plus- the Slow Cooker Corned Beef brisket is cooked in one of my FAVORITE kitchen appliances- the slow cooker! This is the one I have:

Slow Cooked Corned Beef and Cabbage

Ingredients

  • 1 4 lb beef brisket (packaged with spice packet)
  • spice packet (sprinkle on beef)
  • pinch salt
  • 4-6 carrots, peeled and cut into chunks
  • 2 lb small red potatoes, halved
  • 1 lg onion, quartered
  • 1 C water
  • 1 bottle or can of stout beer
  • 1 head green cabbage, quartered

Instructions

  1. In a slow cooker bowl layer all ingredients EXCEPT cabbage.
  2. Place lid on and cook on high 7 hours.
  3. Place cabbage quarters on top, replace lid and cook another hour OR until cabbage is just soft.
  4. Remove all components, slice or shred meat and serve.

Important Notes

I like my cabbage to still be a bit firm. If you do as well maybe cut back the cabbage time to 45 minutes.
