Heavenly Herb Dip~ Garfield: Recipes with CATtitude by Gooseberry Patch

This may be one of my all time favorite dips in my recipe collection.  This one came from the ladies of Gooseberry Patch cookbooks and their new selection~ Garfield: Recipes with CATtitude!

This combines many of my favorites all in one great bite!  I added a bit of Greek Yogurt when I made it for this picture, which is straying from their already fantastic recipe, I know.  Smack my hand for changing it! Feel free to leave it out and make it as the recipe states, it’s pretty darn good!

Heavenly Herb Dip

I added 2 TB of Greek yogurt to this after I made it the first time. Add it in the first step.

Ingredients

  • 1 cucumber, peeled,seeded and chopped
  • 1 red onion, chopped
  • 2 4-oz containers of feta cheese crumbles
  • 1 TB olive oil
  • 2 1/2 TB lemon juice
  • 3 TB fresh mint
  • 3 TB fresh dill

Instructions

  1. Combine cucumber, onion and cheese in a bowl.
  2. Sprinkle with oil, juice and herbs.
  3. Cover and chill until serving time.
  4. Garnish with mint before serving.
