Spicy Cheddar Cheese Sausage Balls

This sausage balls recipe is perfect for brunch, game day snacks, or party appetizers.

For years I have been in a real rut.  A sausage balls rut that is.  I make them every Christmas morning, but seldom through the rest of the year.

I mean, I do make them here or there as a quick breakfast for the boys, but until recently, I always  made them the same way.
2 cups of biscuit mix
2 cups of shredded sharp cheddar cheese
1 pound of sage ground sausage
Easy peasy.

This year, however, I decided to live a little and try something new.  I added a few more ingredients and they turned out awesome, if I do say so myself.

Cheddar Cheese Sausage Balls

ground sausage, cheese and chives are mixed with biscuit dough to make these delicious sausage balls. They’re great for breakfast, brunch, a snack, or an appetizer.

Ingredients

  • 1 pound of ground sausage, I used medium
  • 2 C of biscuit mix, like Bisquick
  • 1/4 C water
  • 2 C shredded sharp cheddar
  • 1/2 finely chopped chives
  • 1/4 tsp of cayenne pepper, or to taste
  • sour cream, to dip, optional

Instructions

  1. Heat oven to 350 F.
  2. Mix dry ingredients into a large mixing bowl; add chives, then incorporate the sausage.
  3. Form into small balls (about 1-inch in diameter). Place on a parchment lined cookie sheet 2 inches apart.
  4. Bake at 350 for 25 minutes.
  5. I make mine ahead of time and place in a resealable bag after they’ve cooled down. Just reheat in the oven for a few minutes until warm.
