Coconut Snowballs -a very festive cookie!
Coconut Snowballs -quite possibly one of the easiest cookies ever! I mean- I made them and they turned out! With a tender dough and a light coconut taste, these are the perfect show stopper for your next cookie exchange!
I first saw the recipe for these coconut snowballs in the December issue of Southern Living Magazine. They caught my eye in an article called: 9 Clever Cookies. I skimmed the recipe and saw right off of the bat that I could handle it. Not that many ingredients and all of them were in my pantry.
One thing I will say about these coconut snowballs is that it only makes 2 dozen. In my opinion that is a good thing because you can easily eat 6 of these before you realize what you have done. Another positive is that these cookies are not too sweet. They are draped with a bit of melted white chocolate once cooled to help the (optional) shaved coconut adhere to the cookie. Follow the 2 included tips. I chilled my dough to make for easier scooping and I also added a bit of coconut oil to the melted white chocolate.
I also pressed the dough into the scoop to ensure a nicely formed dough ball. This helped.
