Sometimes I wouldn’t know a good thing if it smacked me in the face and called me by name. I have turned my nose up at ‘quick foods’ for years because I, for some reason, thought that meant I couldn’t do it better myself from scratch.
Well, HELLO….I don’t know what I was thinking. Taking shortcuts when making meals from scratch is not the same as plopping down a plate of Hamburger Helper on the dinner table. I have learned to embrace shortcuts and I have learned that all things do not have to be from scratch to be healthy, nutritious and family favorites! Creamy Dijon Herb Chicken Skillet
I have a meal that I make often when nothing else sounds good but the recipe calls for half and half or heavy cream and I don’t always have that on hand. Not to mention that it packs a fat/caloric one two punch and let’s face it, I can definitely cut back in this area. A few weeks ago I watched the chef at the Taste of Home show make this creamy Dijon herb chicken. It looked so easy and effortless to make, and it is! It is also such a close cousin to my Chicken with Grapes recipe that I knew that we would love it.
Did I mention that this is one of the quickest meals I have ever seen prepared? At the beginning of the cooking demo, I thought that she would have used cream, or at the very least, half & half. Oh noooo….she used cream cheese. I almost NEVER cook with cream cheese. Baking yes. Dinner on the stove, no. I don’t know why. It might be that I thought it was akin to processed cheese for years. It might be that I am weird…who knows. What I DO know is that I must have been crazy to have not tried this before as this dish is a WINNER!!
Serve the creamy Dijon herb chicken over egg noodles or herb roasted potatoes, with a veggie, like I did with sauteed green beans.

Ingredients
- 1/2 C chicken broth or stock (low sodium and fat)
- 1/4 C Dijon mustard
- 1/3 C low fat cream cheese, softened
- 4 boneless, skinless chicken breasts
- 1 TB oil
- 1 tsp minced garlic
- 1 TB of finely chopped fresh herbs like parsley, basil or chives
Instructions
- Mix broth, mustard, cream cheese and herbs until well blended and set aside. Cook the chicken in a skillet in the oil (you may omit the oil if you wish) over medium high heat until chicken is browned on all sides and cooked through, about 15 minutes.
- Stir in the mustard sauce and garlic. Simmer over medium heat for 3 to 5 minutes or until sauce is thickened slightly. Serve over egg noodles or roasted potatoes.
