I originally shared this strawberry margaritas recipe as part of a Cinco de Mayo feast a couple of years ago. It’s a simple way to jazz up traditional strawberry margaritas, taking them from a simple drink to a decadent dessert.
The fizzy part of this cocktail comes from the addition of creamy strawberry ice cream. By omitting the tequila, this drink easily converts into a non-alcoholic mocktail for a child friendly treat. Plus, kids love the fancy look of a sugar rimmed glass, and they can even help you rim the glasses!

Ingredients
- 2 Tablespoons sugar, for rims of glasses
- 2 cups of softened strawberry ice cream
- 3/4 cups of chopped fresh strawberries
- 2 oz tequila, optional
- 3/4 tsp fresh lime juice
- 1/2 cup club soda
- Strawberries and lime slices, for garnish
Instructions
- Rub a lime slice along the rims of the glasses then dip glass in sugar.
- In a blender, add ice cream, strawberries, tequila (if using), and lime juice, and blend until smooth.
- Pour into glasses. Add a bit of club soda and garnish as desired.
