Strawberry margaritas are often part of a fun Cinco de Mayo celebration! This easy cocktail recipe takes them from cocktail to dessert, adding soft, creamy strawberry ice cream and club soda to them. They easily convert to a mocktail so that the whole family can enjoy them.

I originally shared this strawberry margaritas recipe as part of a Cinco de Mayo feast a couple of years ago. It’s a simple way to jazz up traditional strawberry margaritas, taking them from a simple drink to a decadent dessert.

The fizzy part of this cocktail comes from the addition of creamy strawberry ice cream. By omitting the tequila, this drink easily converts into a non-alcoholic mocktail for a child friendly treat. Plus, kids love the fancy look of a sugar rimmed glass, and they can even help you rim the glasses!
