Traditional Irish soda bread should be part of every St. Patrick’s Day dinner. It has a moist, tender center and a rustic crusty exterior. It’s a hearty bread that’s perfect with a hot bowl of Guinness beef stew or corned beef brisket.

Ingredients

  • 4 cups all-purpose flour
  • 4 tablespoons of sugar
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup margarine, softened (make sure it is room temperature)
  • 1 cup buttermilk
  • 1 egg
  • 1/4 cup butter, melted
  • 1/4 cup buttermilk

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly grease a cookie sheet or use parchment paper.
  3. In a large bowl add flour, sugar, powder, soda and salt and margarine.
  4. Stir in the buttermilk and egg.
  5. Turn dough onto a floured surface and knead slightly.
  6. Form dough into a round and place on prepared cookie sheet.
  7. In a small bowl combine the melted butter with the remaining buttermilk. Brush lightly over the top of the dough.
  8. With a knife, make an X on the top of the dough, and place pan with dough into the oven.
  9. Bake for 40-50 minutes, brushing with the reserved buttermilk mixture every 10 minutes or so, if desired.
  10. Bread is done when a tooth pick into the center of the loaf comes out clean, or with just a few moist crumbs.
