Healthy Family Classics cookbook from Produce for Kids!

Pineapple Mango Chicken Stir Fry is one of many recipes in the NEW cookbook from Produce for Kids: Healthy Family Classics. I was excited to share one of our family favorite recipes with Produce for Kids that is not only a healthy one, but easy to prepare! Produce for Kids is a great partner of Basilmomma.com and the recipes and tips they share on their site are invaluable to busy parents like you and I.

You may recall that I have shared about Produce for Kids in the past. Healthy recipes like no-bake granola balls, hidden veggie meatballs and peach pie smoothies are just a few. In addition to the resources on their website you can also find recipes on handy displays in your local Meijer grocery stores!

Produce for Kids

Produce for Kids partners with national brands to deliver the best and most interesting ways to get your kids eating more fruits and veggies along with moving more. I might add that the recipes they share are great for the whole family. No ‘kiddie food’ here. We make many of their recipes for dinner and I have shared several in some of my television segments, too.

I shared my Pineapple Mango Chicken Stir Fry with Produce for Kids recently and they included the recipe in their new cookbook on page 71! How exciting is that?! You can find this cookbook on Amazon. This Pineapple Mango Chicken Stir Fry recipe is great for a busy weeknight and doesn’t take long to put together. I used canned pineapple and mango- which you can find in the fruit aisle of all grocery stores. You can save even more time (and money) by using pre-cooked frozen brown rice, and jarred minced garlic and ginger, too.

Ingredients

  • 1/4 C reduced sodium soy sauce
  • 2 TB white vinegar
  • 2 TB water
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 TB oil
  • 1 Tb cornstarch
  • 1 red bell pepper, cut into strips
  • 6 green onions, green and white parts sliced and separate
  • 2 C pineapple, chopped (or use canned chunks)
  • 2 C mango, chopped (or use canned)
  • 1 lb chicken breasts, cut into 1″ pieces
  • 4 C brown rice, cooked

Instructions

  1. Combine soy sauce, vinegar, water, garlic and ginger in a small bowl, set aside.
  2. Heat oil in a large skillet.
  3. Toss chicken in cornstarch and add to pan.
  4. Cook 4-5 minutes or until cooked through.
  5. Add peppers and green onions (white pieces), and cook 3-5 minutes or until softened.
  6. Reduce heat to low, add sauce and cook 4 minutes until thickened.
  7. Add pineapple and mango, cook an additional 2-3 minutes.
  8. Serve over cooked brown rice.

    Produce for kids sounds like such a great organization! I'm ALL for teaching kids about healthier meals! This recipe sounds really yummy- I might have to give it a shot with tofu :)
