 Gooseberry Patch Cookbook Giveaway- Foolproof Family Recipes!

Vickie and JoAnn of Gooseberry Patch cookbooks have done it again! Their newest release, Foolproof Family Recipes, is out and chock full of quick and easy favorites you will all love. I was given an advance copy so I could take it for a test drive. I had forgotten that one of MY recipes was in this one!

My mom reminded me. I had flipped through twice and had missed it. What’s fun- several other home cooks that I know, both bloggers and non bloggers, had their precious family recipes in there as well. See, that’s one of the many things that I love about these cookbooks. They are for anyone and include everyone. Simply go to their site to find out how to submit YOUR recipe!

The first thing I made was a no-boil mac & cheese by none other than Indiana blogger Krista Marshall of Everyday Mom’s Meals. Krista shared her Grandmother’s recipe that is a BIG hit in her family. I can see why- it took about 5 minutes to assemble then you let the oven do all of the work! I made this for my guys before heading out of town and they had it for lunch the next day. It comes out creamy and is probably a great candidate for a pitch-in or backyard BBQ.

No-Boil Baked Mac & Cheese

Ingredients

  • 2 C elbow macaroni, uncooked
  • 4 C milk
  • salt/pepper to taste
  • 2 1/2 C shredded sharp cheddar (I used a mix of medium and sharp)

Instructions

  1. Preheat oven to 375 degrees.
  2. Grease a 13×9 pan with butter.
  3. Add the macaroni, milk, salt/pepper and 1/2 of the cheese.
  4. Sprinkle the remaining cheese on top.
  5. Bake for 45 minutes to 1 hour (keep an eye on it) or until noodles are soft.
  6. Remove from oven and allow to sit before serving.

    Well before our son was born I was known for my mexicali cornbread squares. Now it is my two ingredient cake since it is quick and easy. A box of cake mix and a can of pumpkin. I love that I can make it gluten free too and no one knows the difference - that way I can enjoy it too!
