Apple waffles spiced with cinnamon make the best fall breakfast! This easy waffles recipe is from the Gooseberry Patch cookbook, A Hometown Harvest.
If you follow me on Facebook, Twitter or Instagram you may have seen the picture I posted a few weeks ago of a list that my son Jacob made for me. It is a laundry list of recipes he wants me to make from the new Hometown Harvest cookbook from my friends at Gooseberry Patch. Vickie and JoAnn have added another great cookbook to their collection and I was not the only one in my house to read it from cover to cover.
Jacob loves pouring over a good cookbook about as much as I do, so my heart melted just a bit when I saw this. Who could deny him every item on this list!
I started with the Autumn Apple Waffles recipe. I doubled the recipe so I could have enough to freeze and reheat for the school week. This is a simply delicious waffle recipe, and the apple waffles are perfect with my favorite Indiana maple syrup from Burton’s Maplewood Farm on top.
For a delicious fall brunch, besides the apple waffles, you can make Breakfast Lasagna, some homemade cinnamon apple cranberry sauce, and maybe even a loaf of apple quick bread.

Serving Size 2 waffles
Crisp autumn apples and cinnamon baked inside of fluffy waffles.

Ingredients
- 2 C milk
- 2 eggs, beaten
- 1/4 C butter, melted and slightly cooled
- 2 C pancake mix
- 1 TB cinnamon
- 1 C Golden Delicious apples, cored, peeled and finely chopped

garnish: maple syrup and powdered sugar
Instructions
- Combine milk, eggs, butter, pancake mix and cinnamon in a large bowl.
- Beat until batter is smooth, fold in apples.
- Pour batter by 1/4 cupfuls onto a hot waffle griddle.
- Follow manufacturer’s instructions to cook waffles.
- Serve topped with maple syrup and powdered sugar.
