I love, LOVE a good salad but what I really love is using fresh from the field ingredients. That is not always possible with a few of my favorites like spinach and tomatoes unless you grow your own, which I do not.
Luckily I have a good friend in the kitchen, Linda Wallace AKA The Red Gold Tomatoes Lady, and she always shares her newest recipes with me. This particular one can be put together in minutes and you can dress it, as the recipe states, or drizzle a balsamic reduction glaze over the top, like I did. Either way it si pretty close to perfect, chock full of good for you vitamins, and is economical.
