Dip In…

Nothing makes me more nervous then when someone asks me to bring something to a pitch-in.  Well, that may seem dramatic to you but ever since I started writing for our local paper in February there is an allusion that I am TopChef material.  They couldn’t be more wrong.

The more I over think a dish the more likely I am to mess it up.  My best food is spawned from an
off-the-cuff, throw it together kind of night.  Some of my best eats are things that I didn’t measure, didn’t photograph and we all eat while standing over the still steaming dish.

Not to say I can’t whip out a real zinger from time to time but I put pressure on myself to please.  Chances are whoever asked me to make said item likes the way I cook, like I said: off-the-cuff.

So over Labor Day when I was asked to bring a dip, something different, I swallowed my self imposed stress and made what sounded good: Fresh Spinach and Feta Dip with Soft Pita Dippers!!

VERY simple and quick!  Only 3 ingredients!

Fresh Spinach and Feta Dip with Soft Pita Dippers

8 oz of washed baby spinach (I used bagged spinach)
2 5oz containers of crumbled feta
2 garlic cloves (mine were from a woman I know that grows it, much less pungent and so, SO good!)

In a food processor pulse the garlic a few times to mince.  Add the spinach and pulse a few more times.  Add the feta and pulse again.  You can make the consistency to your liking.  I knew I would have leftovers so I pureed mine a little more than usual.  This is GREAT spread on a sandwich.  As a matter of fact we all took this on a pita with freshly sliced turkey breast this week for lunch.

The fresh taste of the spinach and the salty tang of the feta were a real crowd pleaser!  Now, why was I so worried ?  ????

Yes, I know.  My family told me this is not a ‘Pretty Picture’ but it is what it is, right?

    I always feel anxious when I have to bring a dish anywhere. Always...This is a great combination for a dip. Sounds really good. Nothing wrong with the picture. Good job!

    That dip looks awesome. I posted a recipe with spinach and feta today too; I guess great minds think alike! I don't see anything wrong with the picture either. The green color is just beautiful.

    I love how simple this is. Feta is my favorite and it sounds like a great combination with garlic and spinach! Sounds and looks so delicious, I love the color!
