Someone asked me on Christmas what my favorite non-electric kitchen item was. I really didn’t have to pause to consider my answer. Hands down my personal favorite is the Microplane. I have 5 of them ranging in size and purpose. I have one that I take with me when we stay at the lake for the inevitable Black Bean, corn and red pepper “dip” that I make. One huge bowl of that will last all week for Matt, Jacob and I. I could go on and on as to the many uses of the Microplane and it’s history but I will spare you my kitchen-geek talk.

I probably use one of them every day. That’s no exaggeration. From zesting a lime, grating a block of hard cheese, fresh nutmeg, cinnamon or shaving chocolate the uses go on and on.
A good friend of mine asked me today if I might put a few healthy recipes on here. Her question came at a good time, actually. It’s that time of year when people dust off their Weight Watchers points flip cards and don their running shoes. Gyms all over are packed with people who realize that it is roughly 52 school days until spring break. I mean, why pay that monthly fee for a gym membership that you never use? I type this knowing I joined the “Biggest Loser Challenge” at my place of employment today…and I haven’t been to the gym in a month….
So by request here is one healthy, easy and very tasty recipe.
A Microplane zester/grater would come in handy right about now…

The lime zest gives these chops an extra zing. Adjust the seasoning to your liking. Make these in the broiler or on the grill. Serve this with cilantro-lime rice on the side.

Ingredients
- 4 (6 oz) lean boneless pork chops
- 4 cloves garlic, crushed
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 lime, juice of
- lime zest
- salt and fresh pepper
Cilantro-Lime Rice- 1 cup extra long grain rice or basmati rice
- 1/2 lime, juice of
- 2 cups water
- 1 tsp salt
- 3 tbsp fresh chopped cilantro
- 4 tsp vegetable oil
Instructions
For the pork chops- Trim any fat off pork. In a large bowl, season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 20 minutes.
- Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned
For the rice- In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. remove from heat and keep covered an additional 5 minute.
- In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss to combine.
