Cheesy Bacon Asparagus Pastries- combining cheese, bacon, pastry dough and asparagus into one tasty little bundle!
This Easter I was looking for ways to lighten our meal by adding more fresh fruit and fresh veggie salads to our menu. I also wanted to go lighter on the breads and other empty carbs while still having bread. See my conundrum? I wanted it all. Typical me.
I thought about making bacon wrapped asparagus which is always a favorite but in the end I chose to take it one further. I wrapped the asparagus in bacon, dusted it with Parmesan cheese and wrapped it in a crescent roll dough wrapper. That’s it. Simple and delicious. Best of all they looked way fancier than they actually were so I see that as a win ???? Cheesy Bacon Asparagus Pastries for the win!
Side note: I hit gold when I did my grocery shopping at Fresh Thyme Farmers Market in Greenwood the day before Easter. I was expecting them to be picked over but I lucked out with great prices on fruit, the Parmesan cheese I used AND this asparagus! Here are a few of my tips for this Cheesy Bacon Asparagus Pastries recipe and now having made this a few times it is the only way that works for me. When I first made this I used thinly sliced uncooked bacon. The bacon didn’t get fully cooked before the dough did and it was not pleasant. I buy precooked bacon for this as it is pliable enough for me. Also, I used crescent roll dough sheets which you can find everywhere these days. You can also use puff pastry. Just be sure to follow baking instructions on the package. This is also fantastic with shredded Gouda. I just chose to use a milder Parmesan cheese this time since I was feeding guests.

I use thicker stalked asparagus for this. No need to blanch first. This recipe makes 6 bundles. This would also be great topped with a deli-mustard, light sauce or a fried egg.

Ingredients
- 18 stalks of fresh asparagus, trimmed
- 3/4 C shredded or grated Parmesan cheese
- 6 slices of bacon, cooked and cooled
- 1 roll of Pillsbury crescent roll sheet
- kosher salt/fresh black pepper
Instructions
- Preheat oven to 400 degrees.
- Roll out dough on a non-stick or floured surface to form a large rectangle.
- Cut into 6 even squares.
- Take 3 stalks of asparagus in your hand, wrap from top to bottom with a strip of bacon.
- Press down onto 1 square of dough as shown.
- Dust with a TB of cheese.
- Lightly season with kosher salt/pepper.
- Roll 2 diagonal corners into the middle as shown.
- Place on a parchment lined baking sheet 2 inches apart.
- Bake for 18-20 minutes or until dough is lightly brown and cooked through.
- Remove and serve.
