Slow Cooker Lemon Basil Chicken~ the perfect weeknight meal!
There are few things that I make routinely but this-this is one recipe that I do. Whether I serve it over noodles or toss with pasta, ladle over a smashed potato or just on it’s own- this is a perfect one pot meal.
The idea is simple. Chicken breasts or pieces, lemon zest and juice, olive oil, garlic, shallots and basil. That’s it.
It cooks to a tender perfection and when you use boneless breasts you can simply shred the end result and serve a variety of ways. I even use the cooled cooked chicken for chicken salad. Talk about good!
I posted this picture earlier on Instagram and someone asked me for the recipe. I figured I would do something I NEVER do- make something and get it on the site the same day! So here you are. What I don’t have is a photo of the finished product. We were getting lunches together for tomorrow, the light was bad- I was distracted and I forgot. I write about real life here people! No staged photoshopped pictures up in here!
The perfect light weeknight meal! This is also great with whole chickens as well as pork loins.
Ingredients
- 2 lbs boneless skinless chicken breasts
- zest and juice of 1 lemon
- juice of 1 lemon
- 1/4 C olive oil
- 1/2 C torn fresh basil leaves
- 3 cloves garlic, chopped
- 2 large shallots, chopped
- pinch of kosher salt
- fresh cracked pepper
Instructions
- Place all ingredients in a 6 qt slow cooker ending with the basil.
- Be sure you drizzle the olive oil over the chicken.
- Add the non-zested lemon to the crock as well.
- Cook on low 6-8 hours or high for 4-6.
