This vegetarian pasta salad is pretty inexpensive to make, and with a family to feed, that is very important.
This pasta salad is great for those warm weather months when you do not really want to cook dinner. It combines all my favorites, fresh vegetables, greens, olives, pasta, and of course cheese ????

Ingredients
- 1 box (16 ounces) of rotini pasta
- 2 tomatoes, chopped and seeds removed
- 1 small jar of Kalmata olives, chopped
- 1 1/2 C crumbled feta cheese

For the Dressing
- 1/2 C olive oil
- 1/2 C red wine vinegar
- 2 Tbl minced garlic
- 1 tsp salt
- 1/2 tsp ground pepper
- 1 Tbl dried basil
- 1 Tbl of olive juice

Topping
- 2 C chopped fresh spinach
Instructions
- In a large pot of boiling water, cook the noodles according to the directions on the box. Then drain them and run them under cold water till they are cooled down.
- Put the pasta into a serving bowl. Now chop your tomato and olives and add them to the pasta. Add your feta cheese and stir till combined. In a small bowl, whisk your olive oil, vinegar, garlic, salt, pepper, basil, and olive juice. Taste it to make sure it’s to your liking, adding more salt and pepper if needed. Pour it over the pasta and stir well. Add chopped fresh spinach when serving on each plate.
