Chinese Chicken Cabbage Salad with Peanut Sauce is an easy, healthy meal made with cancer fighting foods and delicious flavors!

In January’s Little Red Door Cancer Agency Door to Wellness cooking class we learned a bit more about the many culinary uses for cabbage.

Not ordinary green cabbage that you would associate with coleslaw, but Napa cabbage!

This often overlooked cabbage cousin is not only economical, but it also has many nutritional properties and a milder flavor.

We made a simple Chinese chicken salad that is hearty enough to be served for a meal.

This salad keeps it’s firmness in the refrigerator for a few days, but really is best prepared right before you want to eat it. We used a precooked white meat chicken breast that had been shredded, but you could also use rotisserie chicken or even tuna fish.

Thai peanut sauce is found in the Asian area of the grocery store, as is sesame oil. Both can be used in other recipes and salad dressings as well. I added cooked farro (a healthy grain) to the Chinese chicken salad to add a bit more heft to this complete meal. There is every taste sensation included in this dish- sweet, salty, crunchy, zesty, meat, grain, and veggies!

This Chinese chicken salad was a hit and was amazingly easy to put together.
