A bit about me:
I grew up surrounded by great home cooks. Many of my fondest memories are of time spent in the kitchen. Time spent around our dinner table with friends and family. Things didn’t always work out quite as planned and our misadventures are, to this day, some of the funniest and best remembered parts of the fabric of our family folklore.
My blue hinged plastic recipe box of family recipes could not be much uglier or old fashioned. But, it’s one of my greatest treasures. Recipes written in my grandmother’s spidery cursive and my mom’s clear block letters are the keys to a portal in time. The treasured cast iron skillet that’s been in my family for 4 generations is a magical time machine!

This simple family favorite, my mom’s baked apple skillet pancake, is quick and easy. Your kitchen is going to smell amazing and the result is a magical beautiful fluffy tasty apple pancake with wonderful crisp edges.
Serves 2 lumberjacks or 4 mortals of more modest appetite.

Ingredients
- 1/2 stick of butter
- 2 apples
- 1/8 t each of cinnamon and nutmeg
- 1/2 cup flour
- 1/2 cup milk
- 2 eggs slightly beaten
Instructions
- Melt the butter in a heavy skillet in a 425 degree oven (this takes 3-4 minutes)
- Slice apples into the melted butter, sprinkle with cinnamon and nutmeg and return skillet to oven to cook until apples are softened (approx 5 minutes)
- Meanwhile, combine flour, milk and eggs in a bowl to form the pancake batter. No need to overwork it.
- Pour pancake batter mixture over softened apples in your skillet. Resist the urge to stir it up. Just give the pan a few shakes so that the batter settles into the apple slices and have faith that the apples and batter are going to work things out together in the oven.
- Bake 15-18 minutes at 425 degrees. Serve immediately on warm plates.
