Easy game day recipes to help you feed your crowd are on deck! I’ve got recipes for quick and easy mini turkey sliders and Buffalo chicken potato boats with fresh, homemade blue cheese dressing.
Anyone that knows me…I mean really knows me, is aware that the only sports I will watch on purpose are the ones that my kids are in.
And by in I mean on the field or in the pool at that moment. I have been known to attend ML baseball games on an as needed basis. It’s not that I dislike sports in general, I don’t. I enjoy outdoor activities with my family, like boating, hiking, swimming, etc. It’s difficult getting all geared up to sit and watch a bunch of people I don’t know play a sport I don’t fully understand for 2 or more hours. Truthfully, I have a hard time sitting through anything for 2 or more hours.
I feel like there are so many things I could have been doing in that time. This all boils down to my inability to be still and idle for very long. Now, that doesn’t mean I don’t see the merit of spending that time being with my family and sharing that experience together. I can appreciate that. The thing is…..my Guys would probably prefer that I do something else. That is their Guy Time and who am I to interfere, right?
Truthfully, on a day like today, all I can think of is that for 3 hours they are all going to be happy and entertained. All I have to do is whip up a pre-game dinner of some of our favorite quick and easy game day recipes.
Sometimes, we can’t decide what sounds good to us. Because we are all a very indecisive bunch, I make “mini-meals” from time to time. A little of this and a little of that ????
So today, I’m sharing two easy game day recipes with you:
Mini Turkey Sliders and Buffalo Chicken Potato Boats with fresh, homemade blue cheese dressing.
The sliders are basically just miniature sized turkey burgers, served up on Hawaiian bread rolls. Completely easy and delicious!

The miniature sized turkey burgers are a quick and easy way to feed a crowd on game day. You can substitute ground beef, chicken, or even pork for the ground turkey.

Ingredients

For the Turkey Sliders
- 1 lb. ground turkey
- salt
- pepper
- Worcestershire sauce (a few shakes)
- garlic powder (just a pinch)
- 1 pkg of Hawaiian Wheat rolls, sliced in half
- 1 Roma tomato, sliced
- Pickles and other condiments of your choice

For the Buffalo Chicken
- 3 large Idaho potatoes, baked and slightly cooled; sliced in 1/2 horizontally
- 3 chicken breasts, cooked & cubed (or any leftover chicken or rotisserie)
- Franks Red Hot sauce; as much as needed to coat chicken to desired taste.
- 2 stalks of celery: diced small

For the Blue Cheese Dressing
- 1/2 C blue cheese
- 3 TB buttermilk
- 3 TB light sour cream
- 2 TB light mayonnaise
- 2 tsp white wine vinegar
- 1/4 tsp sugar
- 1/8 tsp garlic powder
- salt, to taste
- pepper, to taste
Instructions

For Turkey Sliders
- Form small patties about 1/2 the size of your palm.
- Grill until the insides are no longer pink, about 4 minutes per side.
- Dress burger with condiments and toppings of your choice.
For Buffalo Chicken Potato Boats
- Add all dressing ingredients to a clean, empty, glass or plastic container with a tight fitting lid.
- Tighten the lid and shake.
- Place cooked chicken into a mixing bowl with the sauce. Stir to coat the chicken. Spoon chicken over the open “boat” of the potato.
- Drizzle with the dressing and garnish with the diced celery.
Important Notes
The dressing can be refrigerated for up to 2 weeks. I like to double the recipe to have on hand, as it goes well with fresh cut up veggies for after school snacks!
