Slow Cooker Corned Beef Brisket with Cabbage is a classic and traditional St. Patrick’s Day dinner. Making it in a slow cooker takes care of the hard work, so you can have a little extra luck of the Irish this year.
You know I love a holiday that involves a themed food! St Patrick’s Day and corned beef seem to be at the top of everyone’s list right now so of course that is what I made on my Eating Around Indy segment on Fox59!
You may recall that I shared a bit of the history of this day a few years ago, in my newspaper column and on my site. Check out the post and get a delicious recipe for Bailey’s Irish Cream Cupcakes, too!
And of course Guinness Beef Stew and Irish Soda Bread!
I love all of the Irish flavors and hearty food for St. Patrick’s Day, but I think corned beef is probably my favorite. It’s tasty on its own, and of course, the leftovers can be used to make a delicious reuben sandwich!
My recipe for slow cooker corned beef brisket and cabbage is very simple. I add one of my favorite local stouts to the pot, but Guinness is a delicious choice, too.

Important Notes
I like my cabbage to still be a bit firm. If you do as well maybe cut back the cabbage time to 45 minutes.
