I have shared many of my favorite recipes using Red Gold Tomatoes over the years but these are by far the easiest and most popular ones I have tried. These lasagna recipes are not only family-friendly, but they are easy to customize with what you like and have on hand. Even better- they are NO BOIL recipes! Can you say fast assembly??

Last month I had the good fortune to make 3 lasagnas with Linda Wallace AKA The Red Gold Lady, on local favorite morning show- IndyStyle (watch us here and here). TO kick off the lasagna promotion with Red Gold Tomatoes and Laura’s Lean Beef we made the all-in-one, the ‘skinny’ all-in-one and a meatless butternut squash and sage variety. All three were terrific and all three offer something for everyone. In addition, since then I have made eggplant florentine, chicken parmesan and a three meat version. My son requested a pepperoni pizza version and that is what I am sharing with you today.

This lasagna recipe uses the base all-in-one from Red Gold and gives it a bit of a pizza twist. I used part skim ricotta, Italian blend cheese, sliced pepperoni and lots of Italian spice. Layer each ingredient just like you would in a typical lasagna fashion.When I combined the sauces, like you do in the all-in-one, I added 1 TB of Italian seasoning. Each layer got a full covering of sliced pepperoni and I even added a few slices to the top.

This is a great base recipe to make your own. On a side note- the skinny variety doesn’t sacrifice flavor when you cut the calories and fat. This one will be my new go-to recipe because it fits in my healthy eating plan.

  1. My husband LOVES lasagna and wishes I would make it more often. These "no boil" recipes look good AND easy. Maybe he will get his lasagna more often. =D
  2. I Love Lasagna! My recipe is to use lean ground beef done well. I put cut up onion, green pepper, red pepper, celery salt, ground black pepper, and garlic powder in with the meat as it's cooking. I use Red Gold diced tomatoes and Red Gold Tomato Paste and add this in when the meat is well done. I simmer for about 20 minutes or so to get all the ingredients to blend together. While the sauce is simmering, I boil by lasagna noodles (almost done, but not actually done) I taste the sauce to see if it needs a little more and if it's tasty, I then start with my layering! I put the sauce on the bottom and add American Cheese, Parmesan Cheese and Mottezarella Cheese on top of the sauce. Then I put the lasagna noodles over the cheese making sure they are touching and cover the cheese. Then I start with the sauce again and so on until the cheese is on the top!(sometimes I use meatballs in the lasagna, if we had meatball sandwiches and there is left overs or Pepperoni as well as the lean ground beef, it all depends on what I have on hand at the time I make my lasagna) We are not ricotta cheese people, so we leave this out.   3. I like the pizza lasagna but since I'm not fond of pepperoni, I think I'd use Italian sausage. Will have to update my grocery list so I have everything I need to make it when my family comes to visit! Thanks!
  4. I love pizza, so I will try the pizza lasanga, I will add Italian sausage, black olives and pepperoni as well as monzerrella cheese!! Mmmm, can't wait
  5. I like lasagna, but our kids are not to hot for it. I think putting the pepperoni on top like you did would make them associate it with pizza and actually want to eat it.
  6. I love lasagna but hardly ever make it because it just seems like it takes forever. I might just have to make one of these recipes though - especially the skinny variety because we need to get back to eating healthy as a family. I would probably add spinach or baby kale. Always trying to find ways to sneak those two into our meals!
