Creamy One Skillet Baked Spaghetti

Creamy One Skillet Baked Spaghetti is quite possibly one my favorite things I have made in a long time! You just can’t beat one skillet meal recipes!

Just today the woman who does my hair told me that I need to do a little cookbook (maybe an E-book) that focuses on skillet meals. I might just do that because this week alone I have made 3- all with the express purpose of sharing recipes for ‘real food that real people eat’ with you all. That and we had to have dinner- so there’s that.

Find this and other great weeknight meals on the Southern Plate Meal Plan Monday Recipe Roundup HERE

But she had a point. So often seemingly simple recipes turn out to be a hot mess. Literally and figuratively. There are few things worse, in the kitchen that is, than cooking a meal that was labor intensive that no one likes. Wasted time AND money.

Here is my last (almost) one skillet meal: baked gnocchi with sausage and peppers

047

Last week I had FOUR WHOLE HOURS where I had to sit somewhere and rather than play on my phone I brought the new  Cook’s Illustrated to look at. In it were tons of ideas on skillet meals, saute tips and so on. There was a recipe for skillet baked spaghetti that looked perfect. That night I made it and- we didn’t love it. It lacked that familiar “red sauce” taste and it was a bit thick (I used linguine instead of the recommended spaghetti). I followed the recipe to the letter. I am also not a big fan of Italian (link) sausage. Seeing that this was indeed a GREAT recipe that needed a few adjustments to suit our tastes, I made it again and once more to be sure. Yes, we have eaten this 3 times in one week but luckily it makes excellent leftovers! Be sure to check out Cook’s Illustrated, though. For several years I have learned more from that publications, along with America’s Test Kitchen and Cooking Light, than any other publication devoted to food.

What I have now is quite possibly going to be the only baked spaghetti recipe I ever use again. You just can’t beat the fact that you cook it ALL in the one skillet and then pop it under the broiler. Creamy one skillet baked spaghetti takes 2 of the 3 possible dishes you will have to wash out of the equation- since you can literally make this all in one skillet. While it is cooking on the stove top you can make a quick side veggie and a salad.

Creamy One Skillet Baked Spaghetti

This is the quintessential 30 minute one-skillet meal. Everything you love about baked spaghetti with out all of the dirty pots to clean up! Adapted from Cook’s Illustrated. Note: The last time I made this I found ‘broken’ spaghetti by Creamette at the grocery and used it.Worked like a charm. It’s just literally pre-broken noodles.

  • 1/4 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried Italian seasoning
  • 1 28 oz can of crushed tomatoes, I used Red Gold Tomatoes

  • 2 1/4 C water

  2. Stir in the garlic, red pepper flakes, seasonings and cook for 30 seconds.
  3. Stir in the water, sauce, salt/pepper and pasta.

I don't think one can ever have too many one-skillet meals under their belt! This is one my family would appreciate, I'm adding it to the menu for next week.

I love the idea of a skillet book!! I know that it would be a help to me... especially producing things like this skillet dish!! Unfortunately my kids can't have dairy.... but I know that if they could, this dish would be an all time favorite! They really miss cheesy dishes like this one. It's a thing of beauty!

I love Cooking Light, ATK and Cooks Illustrated, too. So much so that I have a problem buying more of their magazines than I have time to read them. I can see why this will be your go-to baked spaghetti recipe from now on--it looks like a winner!

You can never have too many one skillet meals. They're life savers for when you don't want to cook, yet your family is all "I'm hungry!". Love the flavors here and nothing beats melted cheese on top.

Sounds delicious, but I have a question. Step 3 of the directions says to add sauce, but there is no sauce listed in the ingredients. What am I not understanding?

The picture looks good! That seems like a lot of meat for only 8 oz of noodles...

I first saw this recipe in America's Test Kitchen. They suggested 12 oz of lean ground meat and 2 links of Italian sausage. The first 2 times I made their recipe as stated it was just not the right amount for us. So I increased it to 1 lb ground meat and 1 lb ground Italian sausage. that is only 10-112 oz more. We just liked the taste and consistency better. And it was more casserole like.
