Spinach  Feta Wonton Cups – As Seen at the Sherwood Oaks Christian Church Holiday Breakfast

Today I shared one of my favorite holiday appetizer recipes for the ladies of Sherwood Oaks Christian Church at their annual Christmas breakfast.

My parents attend this church and a few weeks ago, I was asked to share a recipe with the group of 400+ during the program. I was happy to join in on the fun!

I have never spoken in front of such a large crowd before, but it went well. I purposely chose a recipe that was unique and easy to demonstrate in just a few easy steps.

Plus, I had hoped that using wonton wrappers would add a layer of interest to the group, and I think I was right!

I’ve mentioned a few times over the years that wonton wrappers are one of my favorite ingredients to use when I make appetizers, because they are so easy to customize to the particular flavor profile you want.

Savory or sweet, there is something you can do with these little squares.

Spinach Feta Wonton Cups

Savory and so simple to make, these spinach feta wonton cups are the perfect holiday appetizer recipe.

Ingredients

  • 8-10 ounces of washed and dried Cremini, Baby Bella or button mushrooms, chopped
  • 1 small bag of fresh baby spinach, chopped
  • 1 8 ounce package of low-fat cream cheese, softened
  • 1 4 ounce package of Feta Cheese
  • 1/2 cup of finely chopped green onion
  • 1 cup of grated Parmesan cheese
  • 1 package of won-ton wrappers, found in the produce aisle of most grocery stores
  • salt/fresh pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all of the ingredients (except the won-tons) in a large bowl.
  3. Using 2 mini-muffin pans, insert a won ton wrap in each hole by laying it on top of it.
  4. Add 1 heaping tablespoon to each and insert it into the opening.
  5. Do this for all of your won-tons or until your filling is gone.
  6. You may also use a standard sized muffin pan if you so choose.
  7. Sprinkle the completed cups with the Parmesan cheese and bake until golden, 10-12 minutes.
