Produce for Kids and Meijer Give Back to Help Families {Giveaway}

Meijer is once again partnering with Produce for Kids® for the Annual Get Healthy, Give Hope campaign to raise hundreds of thousands of dollars for children’s organizations. The joint campaign, which begins May 25, will educate families on the benefits of healthy eating and raise money for Meijer’s designated charity – local Children’s Miracle Network Hospitals®. Since 2002, Meijer has raised nearly $950,000 for local children’s organizations.

To help Meijer increase its donation, shoppers through June 21 are encouraged to add more produce to their grocery carts. All 11 participating fruit and vegetable suppliers will make a consumption-based donation to local Children’s Miracle Network Hospitals®, which provides comfort, treatment and hope to millions of sick kids.

“We are proud of our long-standing partnership with Meijer to educate families on healthy eating habits while

improving the lives of children in our local communities,” said John Shuman, president of Produce for Kids.

“We are pleased to continue our partnership with Produce for Kids to not only support such an

important cause, but to also highlight the importance of healthy eating and living among children.”

Throughout the campaign, signage will be featured in Meijer produce departments, which will list all participating companies, as well as healthy, easy-to-prepare recipes. In-store materials also will encourage shoppers to visit www.produceforkids.com for additional information on the campaign and to read healthy tips from real parents.

Florentine Egg Muffins

 

 Florentine Egg Muffins

Serves 4

Prep Time: 30 minutes

Ingredients:

1 Tbsp. unsalted butter

1 cup mushrooms, sliced

½ cup NatureSweet® Glorys™ tomatoes, diced

2 cups Earthbound Farm® organic baby spinach, loosely packed

1 cup red bell peppers, seeded, diced

6 large eggs

1 large Green Giant® Fresh Klondike Rose® potato, grated, cooked

½ cup mozzarella cheese, shredded

Directions:

1. Preheat oven to 400°F.

2. Heat butter in large skillet over medium-high heat; add mushrooms,

tomatoes, spinach and peppers, and cook 5 minutes, or until tender and

water evaporates. Remove from heat and set aside to cool.

3. Beat eggs in large mixing bowl. Mix in cooked vegetables, potatoes and

cheese. Season with salt and pepper.

4. Line large muffin tin with 8 baking cups. Portion ½ cup mixture into each

cup and bake in oven 10-20 minutes, or until eggs puff and are firm.

For a complete meal, serve Florentine Egg Muffins with:

• ½ cup chopped pineapple, pears and bananas

This meal provides 294 nutrient rich calories.

Easy Summer Salad

Easy Summer Salad

Serves 2

Prep Time: 10 minutes

Ingredients:

4 cups DOLE® Spring Mix salad blend

8 oz. lemon pepper rotisserie chicken, skin removed, shredded

8 large Well-Pict Berries® strawberries, sliced

1 cup red seedless grapes

4 Tbsp. Marzetti® Light Raspberry Cabernet Vinaigrette dressing

Directions:

1. Mix salad, chicken, strawberries, grapes and dressing in large bowl.

Divide into two servings.

Suggested sides for a complete meal:

• A glass of Bolthouse Farms® 100% juice

This meal provides 296 nutrient rich calories.

  1. That salad looks so yummy! I never think to put grapes on salad. We've planted a garden that our kids help weed and harvest from, and we also plan to hit the farmers market more regularly this summer!
  2. I really want to try make chips out of veggies - I've seen recipes for zucchini and kale chips I want to try. I think that might be a good way to get my kids to eat them
  3. For me, summer is the perfect time to have as many fresh fruits and veggies as possible. I didn't grow up eating a lot of fruits & veggies, so it's a learning experience for me :-). The last few years we have planted a garden and even made our own pickles! We are a little behind this year, but have already enjoyed a couple of fresh strawberries from our garden :-). I can't wait to make my own salsa!!
  4. Summertime is the perfect time to serve up more veggies. My kids love to eat fruit and the love to pick their own. The love picking their own blueberries and strawberries! I love cutting up oranges and apples and serving them with meals. I also add veggies where I can. You can add veggies to most meals and the kids never know they are there!
  5. I seem to have more time in the summer and when we are on the go I rend to be more prepared and take more fruits and veggies with us...less stopping and grabbing. I also want to make sure I hit the farmers market this summer. This a change from the past.
  6. We already eat a lot of fruits and veggies, but I'd like to start canning more to enjoy summer produce all year long. I am being forced to learn canning techniques as part of my assignment at work, so I plan to use what I learn at home too.
  7. We are already produce fiends at our house, and when summer rolls around, it makes it so much easier w/ all the fresh stuff from farmer's markets and u-pick farms. In fact, we'll be heading out to pick berries later this week. So excited!
