Greek Meatballs with Tzaziki

I want to share a quick and easy meal that I love, LOVE that uses one of my favorite meats: Lamb.  I know what you are thinking, this is a ‘foreign’ meat to you all.  You may never buy it, maybe you don’t know how to prepare it?

A few weeks ago the folks at Superior Farms sent me a shipment of meat to sample.  Sample I did!
I made Pasticcio (my favorite Greek dish) and these little beauties.  I urge you to check out their site if you are unsure how to prepare lamb.. It is a great resource and I am not ashamed to admit that I use company websites for a lot of my recipe help.  I mean, who better to help me than the company themselves?

These little meatballs are great on their own and even better as a burger.  I have made them both ways.  It just so happens than on this particular night I needed apps.

Ingredients

  • 1 lb of ground lamb, I used Superior Farms (meat)
  • 1/3 C feta, crumbled (meat)
  • 2 TB fresh lemon juice (meat)
  • 2 TB each chopped fresh chives,parsley AND mint (meat)
  • 2 small container of Greek yogurt (use 2 TB for meat and leftover amt for dip)
  • 2 green onions, sliced white parts for dip, green for meat
  • the rest of the 4 oz container of crumbled feta (leftover from meat use for dip)
  • salt/pepper to taste (dip)
  • a squirt of lemon juice (dip)
  • 1 TB of chopped mint and chives (dip)
  • 2 TB of chopped parsley (dip)

Instructions

  1. In a bowl add the lamb, chivesmint/parsley, salt, pepper, green parts of the green onion, feta and yogurt.
  2. Shape mixture (all ingredients) into small 1 inch meatballs.
  3. Bake in a 350 degree oven until cooked through, about 30 minutes.
  4. Allow to cool just a bit and serve with a side of Tzaziki.
  5. For the Tzaziki:
  6. In a small bowl combine container of Greek yogurt plus remnants of the leftover from the meat mixture, white parts of the green onion, chopped mint, feta, salt and pepper.
