Here is another great one from the new Gooseberry Patch Cookbook Weeknight Dinners!
We have been battling with my oldest for years about trying beans. He simply won’t budge on the subject. So when I saw this recipe I figured it was worth a try. He eats so much, due to burning so many calories at swim practice, that I keep things like this in the refrigerator to heat up every day for one of his plethora of meals.
He didn’t taste a thing. He had no clue that I had fortified the lean ground beef I used with pinto beans. Shhh…don’t tell him because he complimented me on how great the meat was!
Secret Ingredient Mexican Beef
Ingredients
- 1 LB lean ground beef
- 16 oz can pinto beans
- 2 TB low sodium taco seasoning (I used another TB as well)
Instructions
- Brown beef in a skillet, drain well.
- In a small food processor, puree the beans (and liquid) to a smooth consistency.
- Add beans and seasoning to beef and bring to a simmer for 2 minutes, stirring frequently.
- Serve as desired.
