You may have heard me talk about this salad on last night’s Around The Kitchen Sink Radio show. I adapted this recipe from the Vintage Vera Cookbook that I was recently given by Phyllis Salmons and Vera Guthrie- the ladies of Vintage Vera on Facebook.
I knew when I flipped through this family treasure cookbook that I would be making this first. It is just like what my mother makes and I knew my family would like it too!
Plus, we all have cukes coming out our ears, don’t we?

Cool Cucumber Salad
2 C cucumbers, thinly sliced ( I left the peel on, they were Indiana grown-no wax)
1/2 tsp salt
1 C thinly sliced red onion
1/4 C water
1/4 C vinegar (I used white wine vinegar, but sometimes use red wine vinegar OR champagne-use what you want here!)
1 TB sugar
1/2 to 3/4 tsp dried dill weed
1/4 tsp of freshly ground pepper
Add all of these contents to a bowl, mix and place in refrigerator for one hour to over night.
