Wheat berry white bean salad is a healthy, hearty, and easy side dish recipe. This is a fiber-rich, healthy salad with wheat berries, white beans, and vegetables, tossed with a tangy vinaigrette dressing.
I don’t know if it is just me, but it really is daunting to make something new, for the first time. I have eaten wheat berries several times, but haven’t made them myself until this week. Strange, I know!
What I like to do, when making something new, is to check out the product’s website for ideas on what to make. Or even better, look to see if the packaging has a recipe on it. When I flipped over the package of wheat berries from Bob’s Red Mill, I hit the jackpot; there was a recipe on the back that was EXACTLY what I wanted to make!
This wheat berry salad is packed with healthy, soluble fiber. The flavors are delicious, too!

Ingredients

Salad:
- 1 C cooked Bob’s Red Mill Wheat Berries
- 1 C navy beans
- 1/2 C green onions, chopped
- 1/2 C sliced celery
- 1/2 C tomato, diced

Vinaigrette:
- 1/2 C olive or canola oil
- 2 TB fresh lemon or lime juice
- 2 TB white wine vinegar
- 2 TB parsley, chopped
- 1 TB honey mustard
- 2 TB shallot, minced
- 1/4 tsp sea salt
- 1/4 tsp fresh black pepper
Instructions
- In a large bowl, mix the vinaigrette ingredients and whisk to emulsify.
- Add the salad ingredients and mix well.
- Let chill in refrigerator for a few hours, or overnight for the best flavor.
This wheat berry white bean salad is also great served on a bed of lettuce. That is what I did, when I took it in my lunch this week. ????
