101 Stovetop Suppers Review, Recipe and Giveaway! Ramen Skillet Supper

I hate to say it but only a woman would understand the perfect timing of this cookbook.  Back to school time is upon us and after polling many of my friends I have found that 90% of the cooking is done by the woman on weeknights.  I know that when I have roughly 1 hour to get dinner started, plated, eaten and cleaned up I rely heavily on quick meals~ my own version of “Fast Food“.

Vickie and JoAnn, the creative force behind Gooseberry Patch Cookbooks, have released their newest cookbook 101 Stovetop Suppers and I think this is my favorite so far.  I am partial to The Harvest Table but for me, 101SS hits the nail on the head.  I have made 3 of these recipes so far and all 3 hit my most important points.  Economical, few ingredients,  and fast.

I will be sharing more of these recipes as the week goes on but today I am sharing one of the easiest in the book: Ramen Skillet Supper.

I also made Basil & Tomato Soup that used everything I had just got at the farmers market. Talk about a budget meal I loved?!?

Secret: My 14 year old son made this.  With my help of course.  He devoured it after his swim meet today.  That’s 1 lb of lean ground beef, 2 packages of Ramen Noodles and a package of frozen stir-fry vegetables.  All on his own. I would be remiss if I didn’t also tell you this meal cost me $7.80. For 4 servings.  You can’t beat that!

So do you see why I keep cookbooks like this on hand? And what is better~ the ingredient list is easy to keep stock in by way of the freezer and pantry shelves.  Buy what you need now and save this meal for a night you just need something easy and quick.  Teach your kids to make it ????

You can cut the sodium and fat in the recipe as well using lean ground meat, low sodium stir-fry sauce and omitting the seasoning packet.  I would suggest another alternative of using a beef broth or stock but unless you are making it yourself you are probably not saving much in the sodium department.  The recipe calls for 1 packet of the soup seasoning and I found it to be right on target.

Keep an eye out in your favorite Gooseberry Patch retail outlets as this is coming SOON! I see them almost everywhere we travel from apple orchards to gift shops.  Also, you can always get free or very low cost (I am talking 99 cents here!) ebooks on their website and facebook page.  You can read them on any device, they are easy to download and some even have how-to videos!

Ramen Skillet Supper

Ingredients

  • 1 lb lean ground beef
  • 2 1/2 C water
  • 2 3 oz packages of Ramen Noodles with seasoning packets
  • 1/2 C stir-fry sauce
  • 3 C frozen stir-fry vegetables

Instructions

  1. Brown ground beef, drain.
  2. Add water, sauce, 1 seasoning packet from Ramen and vegetables.
  3. Bring to a boil.
  4. Reduce heat, cover and cook for 5 minutes, stirring occasionally.
  5. Add the broken up Ramen noodles.
  6. Cover and cook 5-8 minutes until sauce is thickened and noodles are tender.

    I Always Cook Extra Chicken, So I Shred It And Use In Quick Dishes Like Tacos, Soups, Or BBQ Sandwiches! Yummy!
